Verrine of strawberries, its vanilla compote and its minute sabayon

To cook like a chef, here is the list of ingredients for 4 people and the recipe to follow step by step!

Ingredients

– 500g strawberries

– 2 eggs

– 2 yolks

– milk

– 80 g of sugar

– 1 vanilla pod

– 1 packet of pink biscuits

Preparation

Finely slice five strawberries and line the verrines. Wash and cut the remaining strawberries into brunoise, then divide it in half.

In a saucepan, stew the strawberries with 40 g of sugar and half the vanilla pod, split in half.

In verrines, place the crushed pink biscuit, the brunoise of fresh strawberries and the stewed one.

sabayon

In a bain-marie, whisk two whole eggs and two yolks in a mixing bowl then add a dash of milk. Then whisk the eggs vigorously until they whiten. Place the sabayon in each verrine.

All that’s left is to taste!
