In November 2021, Morgane Macchi left her job in tourism to devote herself to a new field: 100% plant-based pastry. After training, she founded Les Douceurs du Colibri. It sells its products on the markets of Dijon and surroundings, but also in short circuit stores or directly to individuals as part of orders. For the moment, her sales do not allow her to live from her activity, but she is hopeful: her activity is booming.
Products that attract
While seeking to reduce her consumption of animal products, Morgane Macchi realized thatthere was no vegan offer for pastries : “People are happy to find something plant-based, either because they are vegan, or allergic to lactose or milk, lactose intolerant too”she explains.
Among its customers, there are also people who seek to consume local artisanal products. An interest that the manager of Les Douceurs du Colibri notes on the markets but also in local product stores: “the bulk of my turnover comes from resellers such as Au gramme pres, whose clientele is already well established”.
The impact of inflation on commodities
To replace products of animal origin, Morgane Macchi uses vegetable milks, margarine or cornstarch. As a result, its activity is less affected by the increase in prices than milk or wheat, for example. : “the price of sunflower oil is going up but I don’t use a lot of it, margarine too, but for now they are still manageable”, specifies Morgane Macchi. For now, she does not plan to increase the price of her pastries.
For the moment, the activity does not allow the young woman to make a full living from it, but it hopes to achieve this goal by the end of 2022.
