Mackerel is a sea fish, highly prized for its flesh. It belongs to the same family as tuna. It is very nutritious, inexpensive and consumed in a variety of ways. Chef Benjamin Andreux has even made it his signature starter: “line mackerel”, a mackerel with vinaigrette and yuzu.
