A project that the Côte-d’Orienne carried out for more than five years before seeing it, finally, come to fruition in 2021.

A long-term project

A project that Emilie Jeannin carried for many years, so the breeder obviously remembers the day the slaughterhouse first operated, “I remember it well, it was not so long ago, last August 25 on my farm with our cows.” An intact memory that evokes many feelings that are sometimes contradictory. “It was a rather special moment, very stressful, because we had a lot of expectations, I had been dreaming about it for five years and at the same time, we had a lot of challenges to overcome.” It was only two months after the slaughterhouse began to operate that Emilie Jeannin finally felt extreme joy and relief.

Intense emotion at startup

“In fact it happened two months later, when I arrived on a farm where we were working, the weather was beautifully beautiful that day, it was October 25. And it is that day, when I am arrived at this breeder whom I did not particularly know, I said to myself, this is why I did it! The trucks were installed in the middle of the meadow, the cows were free all around, in an incredible calm. And there, I had that vision. That’s exactly what I wanted to do. “

It’s been a grueling year, says the breeder, who deployed with her team, all the energy she had, “and I think it’s not over but if I had to do it again, I would do it again. It’s so exciting and full of hope to say that we can do anything!”

And now what’s next?

Emilie Jeannin’s goal is that her mobile slaughterhouse becomes a sustainable solution, “that is to say that we are there to promote the know-how of our terroirs, to provide quality food, traced, in short circuits and above all to bring back employment and added value to our territories. “ And remember that with this project, “thirteen jobs have seen the light of day, and that is not nothing in a very small place in Auxois.”

Two experiments are also carried out around this first mobile slaughterhouse. One of them relates to the following assessment: what does it bring in concrete terms in terms of animal welfare? But Emilie Jeannin, does not lose sight of her main objective, “it is to establish our technical functioning well while commercially developing our meats and the meats of the farms with which we work. Bringing back processing, cutting and bringing together the players, and consolidating the link between producers and consumers in our regions. The challenge is really to consolidate and be sustainable. “
