In Arsac (Gironde) is the world champion of young butchers, Gauthier Détrés, who was crowned at only 22 years old. In the United States, during 2h30 of testing, he had to prepare a complete stall. “I’ve always dreamed of it and there, when I see it in my hands, it does something”, assures Gauthier Détrés, world champion of young butchers, who shows his diploma. Several residents of the town followed his exploits.
“It gives a little bit of value to local trade and the know-how of traditional traders”, assures a man. Éric Larrazet, the butcher who has trained the champion since his apprenticeship six years ago, is proud. “When we take them on apprenticeship, we are far from imagining that we are going to take them there”, he says. Gauthier Détrés has received job offers from all over the world, but he prefers to stay in Gironde to take over from his boss. His goal is to become the best worker in France.
