It is a meeting full of flavors that we offer you here since it is about the truffle, an edible underground fungus of the Tuberacrae family.

The revival of truffles in Isère

We stroll through a territory that works so that this truffle can develop again: it is the foothills and foothills of the Chartreuse … The Chartreuse Regional Natural Park, in collaboration with the association “La Catananche Cartusienne” and the Syndicat des Trufficulteurs de l’Isère, has in fact, for several years, set up a program aimed at upgrading wild and cultivated truffles.

Because the truffle does not develop just anywhere and anyhow! It is found at a depth of 1 to 15 cm at the foot of so-called “truffle” trees (pubescent oaks, holm oaks, oaks, but also hazelnuts, hornbeams, Austrian black pines, or beeches and lime trees).

There are truffles … and truffles

There are several species of truffles (black truffle, Burgundy truffle, summer truffle, etc.) whose ripening period is variable. It is then picked up (“cavée”), generally with the help of a trained dog.

We are therefore going to try to know a little more about this mushroom, appreciated since antiquity by the Egyptians and the Romans and which one found in France, on the table of François 1st. A mushroom that some were wary of because they likened it to the devil …
