After Strasbourg and Grenoble, the city of Lyon has decided to ban foie gras from its official receptions. The announcement caused an uproar among professionals, who replied that the industry has already made a lot of efforts.

After Strasbourg (Bas-Rhin), Grenoble (Isère) and Villeurbanne (Rhône), the city of Lyon (Rhône) has decided to ban foie gras from its official receptions. The town hall could go even further by asking restaurants to limit its service. “I think it is unanimous on the part of all the chefs, we will continue to make foie gras, we will continue to please our customers, and we will perhaps even add a second dish on our menu”, reacts Christophe Marguin, chef and president of Toques blancs.

In Montenach (Moselle), Charles Keff has been raising geese since 1988. Passionate about the land, he denies making animals suffer. “If the animal suffers, it does not digest, it will not have foie gras. So before speaking, let’s go out into the field and listen to people who know what they are talking about”, gets carried away the producer. In a market in Périgueux (Dordogne), the capital of foie gras, consumers are annoyed by repeated advertisements. “By dint of removing everything, it will be more worth living”, quips a client. Each year, the French consume an average of 230 grams of foie gras.
