The timeless and delicious cordon-bleu house of Cyril Lignac

A sea bream ceviche on a bed of pomegranate adorned with arugula in balsamic sauce, or a sautéed rabbit with hunter sauce on its small candied onions and accompanied by mini carrot cooked in juice… very little for you! Cooking is good, it’s practical, you have to get started, but simple and balanced everyday dishes are enough.

For that, Cyril Lignac has thought of everything. An original homemade cordon bleu, in the oven, to serve with homemade mash or small simple vegetables. Here is the recipe!

Preperation : 10 minutes

Cooking: 15 minutes

Ingredients for 4 cordon bleu

4 slices of “piccata” veal cutlets (or chicken fillets well cut in half and taped)

4 slices White ham

1 egg

100g Fresh cream

200g Grated Parmesan (or grated Emmental)

0.5 Bunch of washed parsley (stripped and chopped)

25g Hazelnut powder

25g Almond powder

150g Bread crumbs in a fairly large deep plate

3 egg whites in a fairly large deep plate

150g Flour in a fairly large deep plate

25g Butter

This preparation requires several steps, to be followed to the letter, for a truly exquisite recipe:

1. For the filling: in a blender, pour the cheese. Add the crème fraîche and an egg. Mix. Stir in the parsley. You should get a thick textured dough. If your cream is too runny, add cheese. Reserve in the fridge.

2. For the breadcrumbs: mix in a bowl the traditional breadcrumbs with almond powder and hazelnut powder then pour everything into a deep plate.

3. Pour 3 egg whites and 250 g of flour into two other plates.

4. Season the cutlets.

5. Cover them with a slice of ham. Cut off what is protruding.

6. Then garnish them with your cheese-based preparation, adding a teaspoon. tablespoon on one half. Close the escalope in a slipper and slightly fold the edges so that the stuffing stays in place.

7. Dip the cordon bleu in the flour then remove the excess by tapping.

8. Then dip it in the egg white, then in the breadcrumbs.

9. Heat a dash of olive oil in a pan, place the cordon bleu, folding down. Add a knob of butter.

10. When your meat is well colored, place your cordon bleu in a suitable dish and put them in the oven for 6 to 7 minutes. Serve.
