Until April, it is possible to taste sea urchins. In Corsica, some will fish them themselves in the water, while the professionals are worried.

In the bay of Ajaccio (Corse-du-Sud), they are some to jump into the water, Tuesday, February 21, to look for sea urchins. Some taste them, barely caught, directly on the rocks. On the terrace, the tables are full and the sea urchins are numerous. “There is not for everyone. Everyone is fishing and we do not have the quotas”says Momo Sahari, who has worked here for 20 years.

“A catastrophic year”

To taste the sea urchins, customers use either a teaspoon or bread. “They are delicious, sweet, iodized”, describes one of them. Professionals are more bitter. “It is a catastrophic year, for the good reason that there are not many left (…) and they are empty”, observes Xavier d’Orazio, first Prud’homme of the fishermen of Ajaccio. He hopes for better fishing for the months of March and April. The sea urchins can still be eaten for a little less than two months.
