The Schwartzwalder log by Iris Lorentz

Preperation :

The biscuit :

  • 4 eggs
  • 200 g of sugar
  • 200 g of flour
  • 8 tablespoons hot water,
  • 1/2 packet of yeast
  • 1 packet of vanilla sugar
  • 2 large tablespoons of cocoa

Mix the yolks and the sugar until it whitens. Add hot water. Prepare the flour and the cocoa, with the baking powder and the vanilla sugar and mix everything well.

Beat the egg whites and incorporate them into the mass.

Cook on the drip pan at maximum 170-180°C for 20 minutes. It should stay soft, not dry.

Take everything out and turn it over on a damp cloth.

If you want to give it a log shape, roll the dough in the damp cloth.

Half a liter of whipped cream in a cold bowl.

Schnapps (kirsch)

Pit the cherries if necessary.

Mounting

Cut your biscuit into 3 parts (see photo).

Fill the inside of the log with your cream.

Place the rest of your cream in a piping bag and decorate.
