The “Scherwe”, Brigitte Moog’s carnival donuts

CARNIVAL SAND DONUTS: “Scherwe”

Ingredients :

  • 2 eggs
  • 125 g of sugar
  • 65g soft butter
  • 500 g of flour
  • 100 g fresh cream
  • 1 packet baking powder
  • caster or icing sugar for finishing

Shaping:

put all the ingredients in a bowl or in a food processor and knead well to obtain a smooth dough. If necessary you can add cream

Roll out the dough with a rolling pin to a thickness of about ½ cm.

Preheat the fryer or Dutch oven with sunflower oil, be careful this oil can no longer be used for fries because of the sugar residue.

Cut into strips then into diamonds by incising the center.

When the oil is very hot, dip the pasta diamonds in small quantities.

When they rise to the surface, turn them over so that they brown on both sides.

Drain them and immediately, while still hot, roll them in caster sugar that has been prepared in a salad bowl.

Variation: you can also sprinkle them with icing sugar at the end of cooking when they are lukewarm or cold.
