The Rapatel estate in Villefranche du Périgord

From the grafting of the tree, from the maintenance of the orchard to the flour mill, Isabelle and Tanguy de Rosenbo from the Rapatel estate has been passionately practicing their profession as farmers and chestnut processors for several years. The chestnut was for a long time one of the bases of the human diet. The culture developed strongly in the Middle Ages. Its flour was used as a base for making bread in years of bad harvests. This is why the chestnut bears the pretty name ofbreadfruit “. Recognized and then neglected, the chestnut is making a comeback in our modern diet because it is a fruit that under its rough bark hides a melting flesh. In addition, chestnut flour is naturally gluten-free.

Tanguy and Isabelle De Rosenbo grow today 7.5 hectares of chestnut orchard, Before harvesting, the grass is mowed. The harvest begins around mid-September. The chestnuts are picked up with a machine that does not shake the tree as is done for walnuts because the chestnut tree is more fragile.

Once collected, the chestnuts are then washed, sorted and divided into two batches:

– Some of these fresh chestnuts will be used directly to prepare natural chestnuts, gazpacho, sweet products such as jam or chestnut cream.

– Another part, the smallest chestnuts are dried in a dryer to become “chestnuts”, as hard as small pebbles and will be used to make flour, pasta and delicious cakes.

Tanguy and Isabelle de Rosenbo are always looking for new tastes and have embarked on a new project: still wine. A project that will soon see the light of day with the collaboration of the Chante Loiseau estate located in Campagnac lès Quercy in the IGP Périgord area with Domme wine designation. This vineyard worked in Bio is composed only of white grape varieties (Chardonnay, Viognier, Sauvignon). By the end of the year, you will indeed be able to taste the still wine, a white in which chestnut leaves have macerated.
