“In Dijon, get ready to open your mouth wide!”. The Quéquetterie’s message announces the color. The brand is preparing to open a store in the city of the Dukes of Burgundy in January 2022 after conquering food lovers in Paris, Montpellier, Toulouse and Angers. She offers “fluffy pancakes” in the shape of male and female sexes. It was necessary to dare but it is apparently worth it. Thousands are sold a day. Interview with the co-founder of La Quéquetterie, the young Venezuelan entrepreneur Taziana Jurdi.
Choosing a form of sex for cakes, forgive me for that pun, but it’s kind of “bloated”, what gave you this idea?
In fact, it’s from Thailand. They are also found in Spain and that’s where I say to myself, why not do it in France? But I wanted it to be different, to have a fun side and to be able to normalize things. We first launched a “sweet” card and we just launched the card of salty peckers and foufounes, and it also works great. You can find a little hot dog taste
And how much does it cost?
In our menu, the prices vary between 5 and 8 euros.
who are your clients? Is there a typical profile?
No, frankly, there are all types of customers. That’s why I think the concept really revolutionizes things a bit because there are clients of all ages. You can have a day when they’re just young clients. But another day it’s older older people who even come with their families, really.
What are your forecasts in terms of sales in Dijon?
I calculated the pasta used for preparations in our stores. In Montpellier, Toulouse and Angers, they spend a ton of dough per month and we in Paris, it is tons of dough per month, which represents a turnover that varies from 100 to 120,000 euros per month.
How many people does the Quéquetterie employ in France today?
We have 7, 8 employees per store in the provinces and more in Paris. We can say that with all the employees, that represents a hundred people.
And in Dijon, how many employees do you foresee?
Also between 7 and 8 employees. But it also depends on the hours because, for example, we have people who work full time but there are also a lot of students who only go to work on weekends, or 20 hours a week. That’s really what varies.
Has the health crisis given desire for less serious things?
Yes, in fact. In my opinion, this is a concept that would not have worked so well before the Covid. But even in this health crisis, there is a positive side. It does good for people to have less serious things. People also want to live!
You are a pastry chef but also a restaurateur at the base. The begging helped save your restaurants?
Indeed, I have been a restaurateur for seven years and my restaurants were all closed during the health crisis and for me, it was not interesting to open just for deliveries or take-out. Besides, I was afraid that someone would infect us, it was really complicated. So I was paying rent without any income. It was really in the confinement that I thought about this whole concept, the colors and all that. But it’s true that for the first five or six months, there weren’t many people who knew the begging, but I really believed in my project.
What is a “fluffy pancake”?
A “fluffy pancake” translates in French to “crêpe moelleuse”, but it is they are a little softer than those which one makes at home. These pancakes are a little thicker, but are not waffles. Basically, they are plain, but it is up to customers to choose the toppings and ingredients offered in the shops, such as different types of chocolates or Nutella.
