The Ouchettes cheese dairy in Aigrefeuille d’Aunis

Julien Chagneau is a farmer and goat breeder in Aigrefeuille d’Aunis near Lake Frace. He took over from his dad Michel who originally had a herd of around fifty goats. Today, Julien cultivates all his fodder and corn on his land, which will be used to feed the goats.

The milking goats is done twice a day at 6.30 a.m. and 5 p.m. for 2 hours) to harvest between 1200 and 1500 liters of milk.

It is when the milk arrives in the milk taxis at the Ouchettes cheese dairy that Camille begins her work with the help of Aurélie. Camille adds rennet and ferments which will give curds 24 hours later. And it is this “curd” that will be ladled to then be dried in ripening room.

A good thirty different goat’s cheeses are made every day at the Ouchettes cheese dairy, as well as Tomes, Tomettes, fromage blanc and yoghurts. They are sold at the farm but also at the Aigrefeuille d’Aunis market every Saturday morning and in different producer shops as :
