Le 13 Heures takes you to the four corners of the globe to discover summer salads. Heading for Tunisia, Tuesday August 9, and its mechouia which could soon be found on the UNESCO World Heritage List.
Tomatoes, peppers, peppers: these summer vegetables are popular on both sides of the Mediterranean. In Tunisia, they are cooked in mechouia, a “grilled salad” in French. Tunisians taste it everywhere and at any time. “It’s our traditional dish, it’s the best we have”, advances a client on the market. A few steps from here, Chahida Boufaïeb prepares his salads, right in the middle of the halls. She would be the best specialist.
The secret lies in the cooking method. The vegetables are placed directly on the charcoal, with the spices. The dish is then served with its traditional bread. This is a culinary heritage of the Arab-Andalusians, expelled from Granada (Spain) in 1492. Tunisians today love peppers. The mechouia is even sold on the roadside. The pride of an entire people, so much so that some dream of listing it as a UNESCO World Heritage Site.
