As part of the event tour organized by France Bleu in partnership with France Terre de Lait, France Bleu Pays Basque invites you to meet on Tuesday March 22, 2022 at the Halles de Biarritz. From 9 a.m. to 11 a.m., Stéphane Claverie will present a special “Circuit Bleu, flavor side” to you with the participation of culinary author Liliane Otal. Starred Chef Fabrice Idiart will take up the challenge of cooking products from Les Halles merchants live!

The “Chief-surfer” challenged!
Chef Fabrice Idiart draws his roots from the Aldudes valley in the heart of the green hills where you can find kintoa pig or banka trout. His farming family still lives there.
Since then, nothing can tear him away from this land. If not perhaps the ocean with which he feels particularly connected, hence the nickname “Chief-surfer” that some give him.
At the age of 25, he took over the kitchens of “la Réserve” in Saint Jean de Luz, before realizing his dream of running his own restaurant. It will be “The Mill of Alotz” in Arcangues.
With 1 star in the Michelin Guidethe restaurant of the young 35-year-old Chef has become one of the references of gastronomy in the Basque Country.
Stéphane Claverie and Liliane Otal will be with Fabrice Idiart to tour the halls together and find the best seasonal ingredients. With 30 eurosour Chef will:
- prepare a meal for 4 people live, in front of you, with starter, main course and dessert
- by including two dairy products
After this preparation, people present on the market will be able to taste what Fabrice Idiart has prepared and savor the quality of the dishes.
