Spruce is an evergreen conifer very often confused with fir. However, these two essences are distinguished by their needles and their pine cones: the cones of the fir grow upwards, while those of the spruce hang down towards the ground. The other tricks to differentiate them: the spruce spades, the fir not! The spruce is a pantry for squirrels, voles and a refuge for a multitude of birds. The infusion of young spruce needles has been known since time immemorial to thin the mucous membranes and relieve tired or irritated vocal cords. The gum rosin of various species of conifers was consumed as chewing gum, especially by Native Americans.
