The genesis of appellations of origin, a history of winegrowers’ struggle

Years of fighting and the passage of several laws were necessary for the winegrowers to make their way to the merchants. Indeed, there was a time when the name of the place printed on the label of the wine bottle did not indicate the origin of the grape, but rather its place of transformation. To ensure that the grapes came from the promoted terroir, it was necessary for the winegrowers and citizens of the Côte d’Or to mobilize to promote the singularity and quality of the local grape. Jean-Pierre Garcia historian in charge of the UNESCO Chair Culture and Tradition of Wine at the University of Burgundy explains how and why appellations of origin have become a standard, but also a necessity.
