The Gabirottes of Mam’Adiza at the Gua

Gabirottes are mixed cheeses, at the crossroads of Benin and France, my two countries. It will soon be 30 years since I discovered French culture, and particularly through its gastronomy and its cheeses! My turn to share a piece of Benin with you through my Gabirottes!

_Why “Gabirotte”?_Firstly, because I like this name, I find it amusing, but above all because our cows graze in the Seudre marshes from March to November where there are very cute buildings, round with 1 a pointed hat, which we call the “Gabirotes”. It is therefore in homage to these stone huts, characteristic of our “little” built heritage, that I wanted to call my cheese like this. Adiza Mousset.
