The trend continues to be confirmed: Japanese cuisine, and more broadly Asian cuisine, is making its mark in France. But sushi is not alone in doing well. Now, broths and ramen are also popular.
The French have been crazy about sushi since the arrival of the first Japanese restaurants in Paris 40 years ago. In the capital, the establishments of the “little Tokyo” are not empty. Jean-Baptiste Meusnier, founder and chef of the Kodawari restaurants, recreated the identical decor and atmosphere of the fish market. Here, it is the temple of ramen, a broth decorated with noodles, meat or fish. It takes between 13 and 18 euros for a dish.
Why do the French love Japanese cuisine so much? “Virtue is really cooking in front of you, as if we owe you that. It’s a respect we owe the customer, to show him how you work and what you work”, analyzes Emmanuel Rubin, food critic at Le Figaro. Sometimes cooking becomes a show. At Benkay, we practice the art of teppanyaki, minute cooking on a hot plate. Customers come for the show, but also for the delicacy of the dishes.
