“I saw them come out of the oven, I said to myself they are not bad…“The intuition of Damien Dedun, candidate for the grand prize of the best baguette of the City of Paris was good: the Frédéric Comyn bakery, located rue Cambronne, in the 15th arrondissement of the capital, won the competition organized this Thursday. Of the 145 baguettes received by the jury, 57 were eliminated because they did not meet the size and weight criteria (between 50 and 55 cm, between 250 and 270 grams). There were therefore 78 creations left to be decided.
In the jury, there were personalities, such as the former chef of the kitchens of the Elysée, Guillaume Gomez, and the cook revealed by the program Top Chef, Mory Sacko. Five randomly selected Parisians were also part of it. The winner will receive 4,000 euros. He will be able to offer his baguette to the presidential palace. There is no doubt that it will also benefit from substantial economic spinoffs.
Work to be done
Winner last year of the prize for the best croissant in Paris, Damien Dedun says he has seen his sales increase by 20%. “I’m going to have my work cut out“, he laughs, thinking of the additional clientele waiting for him. Aged 34, the young man already has twenty years of experience behind him.. He who had always wanted to be a farmer says he is “fell in love, after a ninth grade internship with a craftsman in Falaise, in Calvados“. When asked his secret, the winner of the 29th edition of the prize for the best baguette in the capital answers: the love of craftsmanship.
