The former station master’s house in Guéthary, a trendy restaurant!

The terrace of the restaurant which offers 90 seats is a few meters from the rails you have a front row seat to watch the trains go by, observe the ocean and enjoy the cuisine of Paul Dubertrand. After studying at the Lycée Hotellier in Biarritz, a passage through the Ferrandi school in Paris Paul traveled to the four corners of the world before settling 7 years ago in this atypical place of Guéthary to open the restaurant “Le Poinçon”. The chef works primarily with local products, this week on his menu the Pavé de Dorade Royale from the country, roasted pumpkin, beluga lentils and creamed bisque, or even stuffed squid.
