Asked about the chocolate salon and its importance to her, she says that it all started there. “I discovered that chocolate is a completely new world and here I am”, says Mélanie Paulau. The chocolatier specializes in Bean-to-bar. “It’s a recent movement (…) it was a German onologist who realized that his chocolate always had the same taste. He made ranges of chocolates in his simplest device”continues the chocolatier.

Respect for producers

Questioned on social issues, particularly on the standards to be respected such as to avoid deforestation, Mélanie Paulau affirms “that solutions exist”. “Our cocoa bean purchasing system is independent of the stock market system (…) we buy the beans at a fair price from a producer or the cooperative. Our producers live decently”explains the creator of 20°Nord 20°Sud.
