The Domaine La Casenove in Trouillas

La Casenove, in Trouillas, is a vast farmhouse of bricks and pebbles, tall trees and sunshine. An old-fashioned estate, patinated and vibrant, with its 14th century tower and some Templar remains, an order which had its heyday in Roussillon and left an indelible mark on the countryside all around the Casenove.

With its large, silent cellars adjoining the house, La Casenove is a very old and beautiful wine property, which has been in the same family for over four hundred years. The 50 hectare domain in one piece stretches over the first slopes of the Aspres.

The wines of the estate

  • Whites : the harsh Mediterranean climate does not allow the creation of great vintages every year. When the year is right, the estate favors a blend of Macabeu-Torbat or Grenache-Roussane. These rare vintages are always vinified and aged in new wood.
  • Roses : usually Syrah-Grenache-Carignan in direct pressing.
  • The Reds : their roots bring back the taste of the soil from the deep layers of the soil. The berry tasting decides when to harvest each plot. The grapes are transported in boxes to the cellar where they are destemmed above the vats, following fermentation – more or less long maceration depending on the type of wine.
  • Les Rivesaltes (Natural Sweet Wines) :
    For the white, everything is played out between aging and oxidation. The wine first spends several years in emptying tanks and then ages for the last two years in barrels lined up in the open air, therefore exposed to bad weather, cold and the heat of the sun. It then rests for a few months in the tank.
    The red are made from Grenache Noir. After mutage on grain followed by a maceration of 2 to 3 weeks depending on the year, the wine is stored away from air in order to avoid any oxidation. Bottling takes place two years later.
    For the muscats, the grapes are picked at very high maturity to extract aromas of candied fruit. These muscats are made to age.
