The “Bolo-Eierküeche”, Bolognese pancakes by Iris Lorentz

Ingredients :

  • 250 g of flour
  • 3 eggs
  • a little salt
  • 1 tablespoon of sugar
  • 300ml milk
  • 200ml water

For garnish :

  • 500 g minced meat
  • an onion
  • 1 small can of tomato puree
  • grated cheese
  • or parmesan
  • a tomato coulis

Preperation :

Beat the dough well until there are no more lumps, leaving it quite liquid.

Brown the onion, add the meat, the tomatoes, it must remain a little liquid.

Slice your pancakes lengthwise, place the filling, roll well.

Place in a dish, sprinkle with gruyère cheese and tomato coulis.

Place in the oven for 20 minutes to brown well.

Serve with salad.

As a bonus: a sweet Valentine’s Day pancake!
