Like every year, the competition for the best baguette in Paris rewards a Parisian baker. The winner then becomes a supplier to the Élysée for one year.
“The baguette must be crispy, of course, it must really sing when you take it. It must have a fatty and creamy crumb”, explains Frédéric Comyn, artisan baker, who won the title of the best baguette in Paris on Friday May 13. It attracts the curious. “I came by to get the best wand”, says a man. “I thought I was going to taste them”, add another. The 14 members of the jury rewarded this bakery, among the 135 baguettes in the running.
Size, weight, taste, cooking… All the criteria are studied. Damien Dedun, the baker, is already twice European bakery champion and 2021 winner of the best croissant. “We did what we do every day in our store. Very clean, with the right dimensions, the right weight”, explains Damien Dedun, head baker. The winner of the title of the best baguette in Paris supplies the Élysée Palace for a year.
