The long stay on slats gives the Xarel-lo (80%), Chardonnay and Pinot Noir a delicately sparkling setting behind its beautiful golden color and its bewitching flavors of quince jelly, candied lemon and marzipan. A large-scale organic bubble, a little saline, with a deep register that places beautiful bitters in the foreground. (5)
