After two days of intense competition, the French team was crowned European pastry champion on Monday.

France was crowned European pastry champion ahead of six other countries, Monday January 22 in Paris, as part of the Europain trade show. The pastry marathon lasted 5h30, without any downtime. The Blues, Jérémy Massing and Haruka Atsuji, created several breathtaking desserts in front of a white-hot audience. First test: a frozen dessert in less than two hours. The French team first presented an apricot sorbet, crunchy hazelnut and yogurt ice cream.

Three months of laboratory work

Then, time for a chocolate and pear soufflé, obviously made without the slightest improvisation. In Alsace, for three months, in the laboratory, this dessert was designed, tested, perfected. “We repeat the actions dozens and dozens of times, so as not to think too much on the big day. That way, it prevents us from stressing, it becomes automatic, it’s immediately much easier to understand as a test” , confides Jérémy Massing. Last moment of tension: the presentation of the works, where you must not tremble or stumble.
