At 46, Stéphane Chauvard has been a baker in the Landes for 5 years now, in Castets where he has set up his bakery and employs seven people with flexible hours to avoid too much hardship at work. At Le Pain d’Ici we work all in organic and with natural sourdough, a whole logic, a whole philosophy of respect for raw materials.
