Le 13 Heures inaugurates its series of reports on summer salads with mango in the biggest consumer country of this fruit, India. 21 million tons are consumed there every year.

This is the essential recipe for Indian summers. The mango salad, light, tasty and refreshing, is a real success in a country where a third of the population is vegetarian. Élisabeth Roussel, French expatriate in India, cooking with coriander leaves. “It’s the fruit of summer so you might as well enjoy it”, she smiles. On the markets, entire stalls are dedicated to this fruit which the Indians love. With its hundred different varieties, it offers many possibilities of dishes.

In some restaurants, mango is at the heart of the menu. Full of nutrients and proteins, it delights locals and tourists in search of freshness. The best grows west of the country. The Alphonso mango can sell for up to 20 euros per kilo. Mitesh Patel, a grower farmer, describes it as “very sweet and tasty”. Its orange color awakens the senses. To harvest it, you have to climb trees or equip yourself with a long pole and be delicate, because the mango is fragile. Fruits that the country exports very little as it is a consumer.
