A senator from the Alpes-Maritimes wants to propose a law to protect the flagship recipes of French regions. The objective is to protect the good tables from faults in taste that distort the art of French cuisine. Example with the Niçoise salad.

On the Côte-d’Azur, the Niçoise salad is one of the most famous culinary specialties. The recipe is very popular in summer, but often distorted. The recipe raises questions. But the original ingredients are salad, tomatoes, olives from Nice (Alpes-Maritimes), hard-boiled eggs, tuna, branch celery, artichokes and anchovies. “In the Niçoise salad, the most important ingredient, I would say, are the anchovies and the olives from Nice. Before, it was the dish of the poor so basically, it was only anchovies, they didn’t have tuna back then”Yohan Gopaul, chef at Le Safari restaurant in Nice.

Franck Viano founded the collective Cuisine niçoise. He calls for a law to defend regional products. “In France, you can deposit a work of art, a novel, a piece of music, not a recipe for cooking. In the country of gastronomy, it’s quite surprising”, he believes. A bill brought by a senator should be tabled soon. If adopted, it could perhaps put an end to the long debate on the true recipe for a Niçoise salad.
