Quinoa salad with pumpkin
This is a good idea for cooking the last pumpkins. For this recipe you will need:
- 200 g of quinoa
- 2 onions
- olive oil
- 1 pumpkin
- pumpkin seeds, sunflower, cranberries
Preheat your oven to 220 °. Peel and cut your pumpkin into cubes, peel and cut your onions, brush with olive oil and place everything on your drip pan and cook for 20 minutes.
While cooking, cook your quinoa in salted water for about 10 minutes. Drain and let cool a little.
Take the pumpkin and onions out of the oven and let cool.
Season and mix everything delicately, add the seeds to your liking and make a vinaigrette with balsamic vinegar and olive oil for example. You can add the aromatic herbs at your disposal to the dish.
