Ingredients
– 500g red tuna
– 1 bunch of coriander
– 100 g of daikon
– 1 cooked beetroot
– 100 g white and black sesame seeds
– 1 zucchini
– 1 spoon of yuzu
– lamb’s lettuce
– salt and pepper
– lemongrass ginger oil
Preparation
Wash and cut the vegetables into brunoise. Cook the zucchini in olive oil for 5 minutes, add salt and pepper, then leave to cool. Divide each of the brunoises in a salad bowl then season with cilantro or any fresh chopped herb.
Remove the skin from the tuna and coat it in the sesame duo. Fry in olive oil for a few minutes on each side.
Dressage
Arrange the vegetable tartare in circles, then scale the tuna and arrange the lamb’s lettuce, yuzu and a few drops of oil all around.
