Scottish salmon fillet, parsnip cream, parmesan tuile

To cook like a chef, here is the list of ingredients for 6 people and the recipe to follow step by step!

Ingredients

– 6 salmon steaks

– 4 parsnips or celery

– 2 dl liquid cream

– milk

– some water

– 50 g of butter

– olive oil

– salt and pepper

– soy sauce

– of honey

– lamb’s lettuce

– 150 g of parmesan

Preparation

Make a muslin

Wash and cut the parsnip into large pieces, then cook in milk and water. After 20 minutes of cooking, pass them through a vegetable mill or soup blender. Cream lightly, season with a bit of butter then salt and pepper.

Tile

Grate the parmesan. On a baking sheet, place a little grated parmesan in a round shape, then cook for 4 minutes at 180°C.

Remove the skin from the salmon and brown it in the pan for a few minutes, then deglaze with soy sauce. Reduce by half, add mile and whip lightly in butter. Place the salmon on a baking sheet. Season it then cook it for 6 minutes.

Dressage

On a large plate, place the parsnip cream and the salmon steak. On the side, arrange the parmesan tile. Add a handful of lightly seasoned lamb’s lettuce. Then surround with a bead of reduced sauce.
