The increase in the price of many food products does not spare school canteens. They are finding it increasingly difficult to stick to their budget.

In a school restaurant where more than 380 meals are served each day, the cost of food is scrutinized on a daily basis. The surge in the price of butter, due to strong international demand, is already having consequences. “Either we will put less (…) or we can replace it with something else, but as sunflower oil will also increase, it will be difficult at some point”testifies David Ruiz, the chef. The impact of the war in Ukraine, with its shortages and increases, weighs on the budget.

“We will no doubt have to substitute products for others or perhaps review our recipes”explains Clotilde Jalladeauresponsible for food purchases. Among the solutions considered, the fight against food waste or the use of local resources. The Limoges green spaces department (Haute-Vienne) now grows some of the vegetables needed for the city’s canteens.
