But to make a success of its paste, it is necessary the intervention of the man. Nothing replaces the hand which mixes, incorporates and which, with a gesture from the past, aerates the preparation. To this, we add rest, 24 hours of patience before being able to use the preparation. Beyond galettes, Sarrasin opens up new culinary horizons with a chapter on noodles that borrows ideas from Japan, Bertrand Larcher’s other passion.
