The disappearance of the Slovenia butcher saddens me. When I lived in Mile End in the 1980s, I went shopping at Slovenia for the family. There was Georges “Gyuri”, the owner of Slovenia at the time. He had come from France and he had learned his trade with the Hungarian butchers of the Hoffner butcher’s shop, rue Prince-Arthur in the 1960s. He was a smart guy, welcoming and always smiling.
In the store, there were products from Austria, Hungary, Poland, Slovenian and Croatian products. It was a little taste straight from Middle Europe. There was also the art of French butchery. At Slovenia, you could find in the windows: smoked beef tongues, guinea fowl, pheasants, partridges, sausages, caviar from the USSR, veal brains, the famous “körözött” (sheep’s cheese seasoned with paprika), roasted meat French… and so on. Unfortunately, a part of the story of the “Hand” flies away.
