Sabayon with clementine and apple crumble

To cook like a chef, here is the list of ingredients for 6 people and the recipe to follow step by step!

Ingredients

– 6 clementines

– 3 apples

– 3 eggs

– 50 g of caster sugar

– 100 g of brown sugar

– 100 g of butter

– 100g of flour

– pink cookie

Preperation

Peel the clementines and collect the segments. To book.

In a bain-marie in a bowl, whisk the eggs with 50 g of caster sugar, until they turn white.

In a deep plate, place the clementine segments. Pour in the sabayon and burn with a blowtorch. Finally, sprinkle with pink biscuit and a physalis.

Crumble

Wash and peel the apples, then cut them into brunoise. With a mixer, combine the butter, brown sugar and flour. Perform sandblasting.

Place the apple brunoise in a mold, then the crumble and, finally, bake for 20 minutes. Let cool.

All you have to do is taste!
