Barely returned from their two-month residency in a restaurant in Brooklyn, Marie-Josée Beaudoin and Patrice Demers announced this week that they were opening a micro-restaurant in Pointe-Saint-Charles next month. It will be called Sabayon and the design will be provided by Mathieu Leclerc, from Studio Knowhow.
“We had signed the lease before leaving for New York”, confides the “little secretive”. Wishing to work in pairs, without employees, the couple imagined an intimate place where only 14 customers could be served at a time. The five- or six-course dinners, with a strong focus on vegetables and fish, will take place from Thursday to Saturday. There will also be two “tables” of French tea on Saturdays. So 28 people per Saturday will be able to enjoy the sweet prowess of “Patrice Pâtissier” and the exceptional infusions of the Quebec company Camellia Sinensis.
The desired formula, in the long term, would be to use the new place on rue Center as a restaurant for three weeks, then to make it a classroom (sommellerie, pastry, cooking in general) for the fourth. Both for dinners and for tea and classes, seats must be purchased in advance, like show tickets. The prices mentioned are currently very reasonable, at $115 in the evening and $48 for tea, service included.
Patrice and Marie-Josée are very excited about this new chapter. “We came back from New York very, very motivated. This adventure confirmed to us that we had made the right choice. We received so much love from Quebecers. On Saturday evenings, they still accounted for 50% of the clientele. At the opening, it will perhaps be New Yorkers who will arrive in Montreal to discover the Sabayon.
