Four of the ten finalists of the S. Pellegrino Young Chef Academy competition are from Quebec. They are Clement Cavoret (Tanière3Quebec), Anthony Vien (Lair3Quebec), Sébastien Rémillard (Bocuse d’Or Canada) and Terry Boutte (Le Mousso, Montreal).
To win their place, each candidate had to submit a dish to the culinary experts at ALMA, the world’s largest international center for teaching and training Italian cuisine.
Three criteria were assessed: technical skills, creativity and arguments in favour of “the transformative power of gastronomy to bring about positive change in society through food,” the press release reads.
The Canadian finals will take place on October 23, 2024 at George Brown College in Toronto, Ontario. Each of the 10 chefs will prepare their own dish, which will this time be judged by the jury composed of Quebec chef Normand Laprise, Ontario chef Jason Bangerter, Langdon Hall, and Thai-born chef Nuit Regular, who owns several restaurants in Toronto.
Only one participant will be declared the winner and will thus advance to the grand finale in Milan. Fifteen regions from around the world will be represented and the dishes will be judged by a panel of seven eminent international chefs.
