Coming from the south, the duo fell in love with Franche Comté and this establishment which they have completely renovated in recent months. From their south, there are many influences from Marseille and its culinary tradition mixed with our Franc Comtois products. Pierre Cossu, a determined chef, knew how to change his menu according to the seasons and understood very early on that he needed to build a good network of regional producers.
Customers in the winter period are served from Monday to Friday, but from April the team multiplies the time slots to serve customers of the nearby Euroveloroute and some of the establishment’s loyal customers for 40 years. On the menu the great classics of the Comtois cold seasons such as the morel crust, and from starter to dessert a festival of hearty dishes warmly served by Maria Flora and her team.
