Roasted duck breast, vitelotte mousseline and Parma ham crisps

To cook like a chef, here is the list of ingredients for 6 people and the recipe to follow step by step!

Ingredients

– 2 breasts

– 300 g of vitelotte

– 50 cl of milk

– 4 slices of Parma ham

– 3 oranges

– arugula

– salt

– pepper

– 70 g of butter

Preperation

Peel the potatoes then cook them in milk and water. After 20 minutes of cooking, pass them through a vegetable mill, remembering to keep the cooking milk in order to obtain a creamy consistency. Season with a piece of butter.

Bake the slices of Parma ham for four minutes at 170 degrees.

Degrease the duck breasts, season on each side and make crosses on the skin side so that the breasts cook evenly. Start cooking in a very hot pan then finish cooking in the oven for 15 minutes at 200 degrees.

Deglaze the pan with the juice of the three oranges then add a splash of water and balsamic vinegar. Finally, let reduce and whisk in butter.

Dressage

Place the vitelotte apple mousseline and then the scalloped duck breasts on a plate. Surround with a bead of sauce and a bunch of arugula. Finally, add the Parma ham crisps.
