The William Blanc cuvée from this Saint-Eustache estate is again very successful in 2021. A blend of hybrids exclusively (frontenac blanc, vidal, vandal-cliche and seyval, in order of importance), it offers a very expressive nose, fruity and vegetal at the same time, with aromas of apple, melon, herbs and white flowers.
Fermentation in stainless steel vats emphasizes freshness and fruitiness on the palate, and a short aging on lees gives it a certain roundness.
Light, dry and fresh, the wine is very well made and once again a fine example of what our Quebec terroir can give.
If you are a fan of Sauvignon Blanc, or even Grüner Veltliner, you will undoubtedly appreciate it. It is ideal for an aperitif, or as an accompaniment to citrus salads, grilled or tartar fish, goat cheese.
