The O’Thym restaurant is the big winner of the 5e Restaurant price Foods from Quebec on the menuon November 15th.
The “Bring your own wine” establishment, which has been open for 18 years in the Village, has taken a local turn in recent years, with 99% of the ingredients used coming from Quebec.
“I do it for my children, because it’s part of my values and it makes sense to me, but also because it’s a challenge I set myself that stimulates my desire to cook and my creativity”, explains chef Noé Lainesse.
In order to be able to allow his customers to eat locally all year round, he has developed many preservation techniques, in particular with vacuum packing and lactofermentation. On his menu these days, you will find, among other things, a dish of steamed smoked char from Gaspésie, fingerling potatoes and lacto-fermented rhubarb cream or even squash gnuddis with Louis d’Or cheese served on spinach and green leek oil.
This was the fourth time that O’Thym has been a finalist for this award, which recognizes the exceptional work of some 700 restaurateurs who participate in the Aliments du Québec au menu program.
For each edition, 15 establishments are selected, then three finalists are named before the final unveiling. This year, the other two finalists were La Belle Histoire (Sainte-Marguerite-du-Lac-Masson) and Côté-Est (Kamouraska).
