Both a restaurant and a tea room, the Etable d’Ossau is located in an enchanting place with a breathtaking view of the mountains. A gastronomic cuisine that draws its inspiration from local and organic products most often. L’Etable d’Ossau obtains its supplies from nearby farms. And this cuisine takes us to other horizons. Those of these two young chefs who met in Argentina, the country where Matias Ferreyra is from. Kristian Poppe is French but loves oriental cuisine and Street Food which are so fashionable.

A cuisine based on local products that takes us elsewhere: a whole know-how that has been successful.

Kristian Poppe and Matias Ferreyra traveled to the markets of Gan, Oloron and Nay to discover the local producers with whom they decided to work. They are supplied within a radius of 5 to 10 km around the restaurant. For the fish, they have trusted the artisanal fishermen “Poiscaille” from Saint Jean de Luz who provide them with the fish of the day according to the catch of the moment: scallops, mullet, spider crab or cuttlefish. For the meat it is that of Bio Béarn in Ogeu, the duck of Hondet, the pork of the ARL Trouillet and there are also the cheese producers who supply them. For example, the Hourquet goat farm and their goat and veal droppings in Rébénacq or La ferme du Moure for cows in Sévignacq. We eat meat accompanied by Chimichurri, a condiment from Argentina. Candied leeks with fresh cream or fresh cow’s cheese with toasted hazelnuts and parsley: two starter ideas. Tacos or bread are homemade. Discover Pastrami with veal belly, the meat is first marinated then smoked and then baked. A dish that is prepared over several weeks. For dessert, a cheesecake with flowers and seasonal fruits.
