Kristian Poppe and Matias Ferreyra traveled to the markets of Gan, Oloron and Nay to discover the local producers with whom they decided to work. They are supplied within a radius of 5 to 10 km around the restaurant. For the fish, they have trusted the artisanal fishermen “Poiscaille” from Saint Jean de Luz who provide them with the fish of the day according to the catch of the moment: scallops, mullet, spider crab or cuttlefish. For the meat it is that of Bio Béarn in Ogeu, the duck of Hondet, the pork of the ARL Trouillet and there are also the cheese producers who supply them. For example, the Hourquet goat farm and their goat and veal droppings in Rébénacq or La ferme du Moure for cows in Sévignacq. We eat meat accompanied by Chimichurri, a condiment from Argentina. Candied leeks with fresh cream or fresh cow’s cheese with toasted hazelnuts and parsley: two starter ideas. Tacos or bread are homemade. Discover Pastrami with veal belly, the meat is first marinated then smoked and then baked. A dish that is prepared over several weeks. For dessert, a cheesecake with flowers and seasonal fruits.
