– 200g strawberries
– 200g raspberries
– 200 g blackberries
– 1 bunch of mint
– 120 g of egg white
– 220 g of sugar
– pink biscuit ice cream
Preparation
Wash, hull the strawberries then cut them into brunoise. Cut the other fruits into pieces then mix everything with the chopped mint.
In a saucepan, heat the sugar and water to 120°C then pour over the whipped egg whites. Let mix for 5 minutes. Put in a piping bag with a Saint-Honoré nozzle.
Dressage
Place the red fruit tartare on top with a piping bag, then the meringue, a few pistachios and a quenelle of pink biscuit ice cream.
