Red fruit soup and vanilla ice cream quenelle

Ingredients

– 400g strawberries

– 200g raspberries

– 200 g blackberries

– 1 bunch of mint

– 30 g of sugar

– vanilla ice cream

Preparation

Wash and hull the strawberries, then cut the other fruits into pieces. In a saucepan, bring the sugar to a boil, covered with water, then add the bunch of chopped mint. Then, pour this syrup over the fruit, mix for a long time and set aside in the fridge.

Dressage

Pour the soup into soup plates then place the quenelle of ice cream. Prick with a crunchy biscuit, if you feel like it.
