The 94 salt workers of the Ile de Noirmoutier Salt Cooperative will not soon forget this 2022 vintage. The weather conditions -heat, sun and wind- were “propitious for producers whose harvest was, for some, doubled, compared to previous years” indicates the Cooperative. More than 5 thousand tons of coarse salt were harvested, this is more than the previous record of 2019 with 4,200 tons. In addition, the fleur de sel collected from the surface of the water also displays figures never before reached: 180 tonsdouble that of previous years.
