Recipe for shrimp soup with maple water reduction

INGREDIENTS

8 cups of pure maple water

16 large prawns, peeled

2 cups baby spinach

1 medium carrot, peeled and grated

1 green onion minced

1 C. tablespoon chopped red pepper

1 C. lime juice

PREPERATION

In a saucepan, reduce the maple water by half (about 25 minutes).

Add the shrimp to the reduction and cook for 3 minutes.

In a bowl, combine the rest of the ingredients. Pour in the maple sap and the hot shrimp and serve.
